Lemon Rosemary Salmon

Ingredients:-

1 Lemon (thinly Sliced)

4 Springs fresh Rosemary

2 Salmon fillets, (bones and skin removed)

Coarse Salt to taste

1 tablespoon Olive Oil (or as needed)

Process:-

Step 1:- Preheat oven to 400 degrees F (200 degree C).

Step 2:- Arrange half the Lemon slices in a single layer in a baking dish. Layer with 2 Sprigs Rosemary, and top with Salmon fillets.

Step 3:- Sprinkle Salmon with salt, layer with remaining Rosemary sprigs, and top with remaining Lemon slices.

Step 4:- Drizzle with Olive Oil.

Step 5:- Bake 20 minutes in the preheated oven, or until fish is easily flaked with a fork.

Your recipe is ready to serve.

Dhokar Dalna

Ingredients:-

1 cup Chana Dal; Bay Leaf; 1|2 tsp Cumin Seeds; 2 tsp Ginger Powder; 1|2 tsp Sugar; 3 pinches of Salt; 2 tbsp Ghee; 1 large Potato(Chopped into Cubes),peeled; 1 tsp Asafetida; 2 tsp Cumin Powder; 2 tsp Red Chili Powder; 1|2 tsp Turmeric; 1 tsp Garam Masala; 5 tbsp Mustard Oil

Process:-

Step 1: Soak the Chana Dal overnight or for a minimum of 3-4 hours.

Step 2: Take a blender and make a smooth and thick paste of Dal. Now take a deep pan and heat oil.

Step 3: Take the paste and fry in oil at low flame for a minimum of 10 minutes from all sides.

Step 4: While frying adds Cumin, Ginger, Red Chili Powder or paste each of 1 tsp and Sugar. Add Salt according to taste.

Step 5: Take a big plate and grease it with Oil.Take the paste and pour it on the plate. While it is warm, pat the paste with your hands and form a flat, little-raised structure.

Step 6: Take a knife and cut the paste in small square or diamond shapes. Let the lentils paste get cool, hard. When the structures are ready then take them out slowly.

Step 7: Marinate Potato cubes and the lentils cake with Salt and Turmeric Powder. Now fry them in oil till they get golden brown on both sides.

Step 8: Take a deep pan. Heat fresh oil.Add Cumin Seeds, Hing and Bay Leaf and saute for 2 minutes. Now add rest of the Cumin, Ginger and Red Chili paste and half cup water. Saute them well.

Step 9: Saute till the spices start leaving the Water. Now add Potato cubes and 2 cups of water.

Step 10: When the Potato cubes are almost boiled, add lentils cakes. Cook it 5 minutes in medium flame.

Step 11: Add Garam Masala Powder and Ghee. Cook for another 2 or 3 minutes. Switch off the burner.

Dhokar Dalna is ready to serve. Serve it with Steamed Rice.

Steam Bunny Chicken Bao

Ingredients:

12 Buns

For the Dough:

400 gms all purpose White Flour, 7 gms dry Yeast, 5 gms Sugar, 1\2 tsp Salt, Warm Water.

For the Filling:

150 gms Chicken Mince, 2 large Eggs, 2 tsp Soy Sauce, 1 tsp Sugar, 1 tsp Sesame Oil, 5 ml Worcestershire Sauce, 3 tbsp Chives(finely chopped), 20 gms Aroma Powder.

Process:

Step 1: Mix together all-purpose White Flour, Sugar, Salt.

Step 2: Take another bowl with 330 ml of Warm Water, put dry Yeast. Wait for 10 minutes then add the mixture of Flour and knead until smooth.

Step 3: Cover it with wet cloth for 30 minutes.

Step 4: In the meantime, make the filling. Heat a dry non-stick frying pan, put the Sesame Oil and add Chicken mince. Stir the Chicken.

Step 5: Cook well and mixed together the Eggs, Soy Sauce, Sugar, Worcestershire Sauce, Chives and Aroma Powder. Mix well and let it cool till room temperature.

Step 6: Now roll out the dough into long barrel shape. With the help of a scissor make the rabbit ear and mouth cut in the dough.

Step 7: Fry or Heat a steamer over a medium high heat and steam the Buns for about 8 minutes, until puffed up.

Step 8: The Bao is ready, serve with Green Pepper Sauce.

কাঁচকলার কাটলেট

প্রয়োজনীয় উপকরণ:-

কাঁচকলা -১টি; ভিনিগার- ১চা চামচ; আদাবাটা-১\২ চা চামচ; রসুন বাটা-১\২ চা চামচ; ডিম- ১টি; নুন-স্বাদমত; বিস্কুটের গুঁড়ো- ১কাপ; হলুদের গুঁড়ো-১\২ চা চামচ; লঙ্কার গুঁড়ো-১\২ চা চামচ; তেল-১কাপ।

পদ্ধতি:-

১) কলা অর্ধেক করে নিয়ে পাতলা পাতলা করে কেটে নিতে হবে।

২) আদা, রসুন বাটা ভিনিগার দিয়ে কলাটা মেখে রাখতে হবে এক ঘন্টা। এবং তাতে কাটা দিয়ে ফুটো করে নিতে হবে যাতে মশলা ঢুকতে পারে।

৩) এক ঘন্টা পরে মিশ্রণটি নুন, হলুদ গুঁড়ো, ও লঙ্কার গুঁড়ো দিয়ে মাখতে হবে।

৪) একটা বাটিতে ডিম নুন দিয়ে গুলে রাখতে হবে।

৫)একেকটা কাঁচকলার পিস নিয়ে ডিমের গোলায় ডুবিয়ে বিস্কুটের গুঁড়ো মাখিয়ে ছাকা তেলে ভেজে নিন।

এরপর এটি কাসুন্দি বা সস দিয়ে পরিবেশন করুন।

Spicy Chicken Plantain Soup

Ingredients:-

1|2 tablespoon olive oil; 1 cup carrots(chopped into 1|2 inch pieces); 1 medium onion(chopped into 1|4 inch pieces); 2 cloves garlic(minced); 1 cup zucchini(chopped into 1|4-inch pieces); 1 cup squash(chopped into 1|2- inch pieces); 1|2 tablespoon olive oil; 3|4 pound skinless, boneless chicken thighs; 1|2 teaspoon freshly ground black pepper; 1 chipotle pepper in Adobo sauce(minced); 2 yellow plantains(peeled and cut into 1-inch rounds); 1 teaspoon kosher salt Pinch of cayenne pepper; 4 cups of water; 5 cups of Kale(roughly chopped); 1|2 cup cilantro leaves(roughly chopped); 1|2 cup tortilla chips.

Process:-

Heat 1|2 tablespoon of olive oil in a large soup pot. Add carrots, onions and garlic and saute for 3 minutes. Mix in the zucchini and squash. Heat 1|2 tablespoon olive oil in a large saute pan over medium heat and add the chicken thighs. Season with 1|2 teaspoon pepper and cover. Cook for approximately 5 minutes on each side, or until the chicken is cooked through. Remove the chicken onto a work surface, chop it into 1-inch pieces and reserve. Add chipotle and plantains to the pot and gently stir. Add 1 teaspoon salt and a pinch of cayenne pepper. Pour in water and bring to a boil. Reduce to a simmer and cook for 5 minutes, until the plantains are tender when pierced with a fork. Add kale and simmer for 3 minutes longer. Turn flame off the soup and stir in cilantro and reserved, cooked chicken. Divide the soup among 4 bowls, and top each bowl with 1|4 cup tortilla chips.

Now the soup is ready to serve
